IT STARTED WITH A DIFFICULT YEAR
Around 2019, one of us became very unwell.
What began as a collection of seemingly unrelated problems eventually became serious enough to disrupt everyday life. There were doctor visits, an emergency-room visit, dental problems and considerable pain, but no clear explanation for what was happening.
It became a turning point.
We went home and started reading.
At first, we simply wanted to understand more about what had happened. We read about physiology, nutrition, ingredients, cooking methods and the ways food interacts with the body. We began paying much closer attention to what we ate and how it was prepared.
And slowly, our relationship with food changed.
Foods and cooking traditions we had known all our lives began to look different when examined ingredient by ingredient. We became more interested in whole spices. We questioned ingredients we had previously taken for granted. We paid attention to oils, processing, preparation and time.
We also started cooking differently.
Not because we had discovered a miracle diet. And not because we believed food could replace medicine.
We had simply become convinced that what we eat every day deserves far more attention than we had been giving it.
The immediate health scare eventually passed. The curiosity didn't.
We kept reading. We kept experimenting. We kept refining the food we made at home. As scientists, asking questions and following evidence came naturally to us. As people who genuinely loved food, flavor still mattered just as much.
Eventually those two interests became difficult to separate.
We wanted food made with ingredients we understood. Food with extraordinary flavor. Food prepared patiently. Food we would be comfortable serving to the people we cared about.
And we discovered that we had quite a lot we wanted to share.
So we built Braised Yum.
Not around a promise of perfect health.
Around a simpler idea:
Food matters. How we make it matters. And there is always more to learn.
